Mixed Vegetable and Bean Chilli Soup

Cheap, easy to make and perfect for losing weight!

Makes 4 portions

1 large carrot chopped
1 large onion chopped
2 celery sticks chopped
½ large yellow pepper chopped
4 cauliflower florets cut into bite size portions
1 400ml can red kidney beans
1 400ml can tomatoes
2 vegetable stock cubes made up to 400ml boiling stock
½ teaspoon cumin
Pinch chilli flakes
1 tablespoon olive oil

Method

Heat the olive oil in a large saucepan.  Add the carrots, onion, celery, pepper and cauliflower and cook for a few minutes until they soften.  Add the cumin and chilli flakes and cook for a few more minutes.  Add the kidney beans, tomatoes and stock then bring to the boil and simmer for 30 minutes.  Eat immediately or leave to cool and transfer to fridge in saucepan, or large dish with a lid.

Individual portions can be heated in a microwaveable dish with a lid in the microwave for 3-4 minutes.  I like it with a small portion of half fat grated mature cheddar cheese on top (for the protein).
